I really like Taste of Nature bars. They are so good and as far as nut bars go are fairly inexpensive compared to other brands. I got to thinking that I could likely make my own bars and have them taste just as good for less. Here’s my version of a seed and nut bar. The only thing is that at room temperature they aren’t quite as glued together as the Taste of Nature bars. These come in at such a savings and really do taste great so I am willing to look past this aspect.
In a large bowl combine one cup chopped pecans, one cup almonds, one cup pepitas, one cup sunflower seed, one cup raisins, a third cup sesame seeds and three cups brown rice crisps. Set aside.
In a medium sauce pan combine 8 chopped dates with a quarter cup water and boil over high heat until the dates have melted into the water and you have a date paste. Add three fourths a cup brown rice syrup and heat until just boiling.
Pour the syrup over the nut mixture and stir so everything is coated.
Pour the mixture into a coconut oil greased pan and press the mixture down. Let it cool in the fridge for thirty minutes. Remove from fridge and cover with wax or parchment paper. Now you want to press the mixture down to compact it…this will help it stick together. ( I didn’t do this well enough – which could account for the slight lack of stick togetherness).
Once you have completely squished the mixture put it back into the fridge and let it set for a few more hours. Cut, wrap and store until ready to enjoy!
