Vegan Oatmeal Chocolate Chip Cookies

Chewy, chocolaty, oatmealy, yummyness…oh and they’re vegan!

In a small bowl combine 1 Tbsp flax seed meal with 3 Tbsp water. Let sit about five minutes until gelatinous.

In a large bowl combine 1/2 cup coconut oil with 1/2 cup brown rice syrup or honey if you’re a honey eating vegan. Once combined add 1 Tbsp molasses. This will give the cookies that rich brown sugary taste without having to use the sugar.

You can now add the flax as its probably been about five minutes. If not and you are a really fast mixer then wait. The flax acts as the egg in this recipe so please don’t leave it out.

Now add 1 tsp baking soda 1/2 tsp salt and 1/2 cup chocolate chips. Make sure to read the ingredients…there are a few brands that are vegan you just have to look around. Sunspire are fair trade and vegan. Foley’s, a Canadian company, sell several types of chips that are made without animal products.

Lastly incorporate 1 1/2 cups rolled oats and 1/2 cup whole wheat pastry flour.

Spoon onto a cookie sheet and bake at 350 for about eight minutes. I think mine were in for about ten and were a bit over done…I was busy getting toddler some cereal and next thing I knew the cookies were done a bit too much.

Vegan Oatmeal Chocolate Chip Cookies

Makes 12 medium size cookies.

1 Tbsp flax seed meal
3 Tbsp water
1/2 cup coconut oil
1/2 brown rice syrup or honey
1 Tbsp molasses
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
1 1/2 cup rolled oats
1/2 cup whole wheat pastry flour
