Meatless Monday- Pierogi Lasagna


Eating meatless meals doesn’t need to be complicated, expensive or involve a trip to the store for specialty ingredients. Pierogi Lasagna is an easy, cheap meal to put together. It can even be made ahead or frozen.

Prepare the ingredients:

Boil five to six medium to large size potatoes. Any kind you have on hand will work.

Mash the potatoes with a little butter and milk, or sour cream, or cottage cheese or greek yogurt. Whatever you like really.

Boil 9 lasagna noodles. The ready to bake kind won’t really work as there is not enough liquid in the recipe. The ready to bake ones can be boiled if that’s what you have.

Brown half a chopped onion in butter. Mix the browned onions into the potatoes.

Grate about 2 cups of cheddar cheese.

Layer the lasagna into a greased dish starting with a row of three noodles. Add a layer of the potatoes and a layer of cheese. Repeat with the remainder of ingredients. You want to end up with potatoes and cheese on top. If you end with pasta it gets dry and crispy in a chewy not so nice way.

Serve with veggies.

Pierogi Lasagna

5-6 medium- large potatoes
9 lasagna noodles
2 Tbsp butter
1/4 cup milk
1/2 chopped onion
2 cups grated cheddar cheese
