Refried Bean Burritos with Black Beans and Rice

This week I thought I’d give you a peek into our full day of meat free eating for Meatless Monday. I hope some of these recipes will inspire you to try out a Meatless Monday of your own.

For breakfast we had a recipe that I wish I had thought of. Do you ever have that feeling? It comes to us from my sister’s pantry and its awesome. The recipe’s called “hot and hearty” – better than porridge. I think that name says it all. We added pecans instead of the walnuts the recipe calls for and chopped dates. I just added everything in at the start and boiled then simmered. This worked for us but if you want a better consistency I would stick with the recipe.

For our meatless lunch we just had some peanut butter and jam sandwiches with veggies and fruit on the side. Now for supper we enjoyed some seriously good burritos. Here’s the pic before I rolled it up.


For the Black Beans and Rice Put 1/2 cup dry black beans into a Dutch oven along with 1 1/2 cups water and some sea salt. Put into a 350 degree oven. After an hour remove the beans from the oven and add 1 cup brown rice, 1 cup diced to tomatoes, Cayenne pepper (as much as you and yours enjoy ) and two more cups water. Put it back in the oven for another 1 1/2- 2 hours until the beans and rice are cooked.


For the Refried Beans put a good swirl of olive oil in a fry pan with 1/2 a chopped onion. Fry over medium heat until soft. Add 3 cups mashed up cooked pinto beans (1 cup dried will yield about this much), 2 cloves minced garlic, 1-3 tsp chipotle powder, 2 tsp cilantro and 1 cup water. Cook until it is all combined and the mix is all soft and yummy. If desired add 1 cup shredded cheese.


Now it’s time assemble.

Lay out your tortilla.


Spread on the refried beans.


Put on the rice and beans.


Add toppings…could be cheese, sour cream, salsa, guacamole.


Roll and eat away.


Refried Beans

Olive oil
1/2 chopped onion
3 cups mashed cooked pinto beans
2 colves minced garlic
1-3 Tbsp chipotle powder
2 tsp dried cilantro

Black Beans and Rice

1/2 cup black beans
1 1/2 cups water
Sea salt
1 cup brown rice
1 cup diced tomatoes
2 cups water
Cayenne pepper


Prepared Refried Beans
Prepared Black Beans and Rice
Toppings such as salsa, cheese, sour cream, guacamole
