Quinoa Spelt Cakes

Now if Quinoa Spelt Cakes don’t sound super appetizing to you the other name I have for these are little cakes of deliciousness. For a cake without sugar these have just the right amount of sweetness…seriously you could put icing on them and serve them at a birthday. Here’s how it done.

Rinse 1/2 cup quinoa and put it in a pot with 1 cup of water and 10 finely chopped dates. Bring to a boil. Once boiling reduce heat to low medium and simmer covered for 12 – 15 minutes. Once done transfer to a large bowl and cool.

Once quinoa is cool add 3/4 cup unsweetened vanilla almond milk or plain milk, one egg, 1/4 cup coconut oil and 1 Tbsp vanilla. Mix well.

Next add 2 cups spelt flour, 2 tsp baking soda, pinch of sea salt and any extras you want. Extras could be dried fruit, nuts, seeds, chocolate chips, coconut etc… I added 3/4 cup carob chips.

Quinoa Spelt Cakes

1/2 cup quinoa
1 cup water
10 finely chopped dates
3/4 cup unsweetened vanilla almond milk or other milk product
1 egg
1/4 cup coconut oil
1 Tbsp vanilla
2 cups spelt flour
2 tsp baking soda
Pinch of sea salt
3/4 cup extras if desired.
