Meatless Monday under 15

Going meatless one or more days a week is beneficial to both you and the environment. By enjoying meat free fare every Monday you are helping to lower greenhouse gas emissions thereby reducing your carbon footprint by up to 28% a week, saving money, meat is expensive, and experiencing a bunch of health benefits.

Going meatless doesn’t have to be difficult or time consuming. Actually most of our Meatless Monday meals are prepared in 15- 20 minutes leaving me with more time to spend with my family…yet another benefit of going meat free. Here’s a recipe for a favourite in our house: Black Bean Nachos.

Gather your ingredients.

Create a layer of nachos on a baking sheet. Sprinkle with black beans and cheese. I always make extra beans to put in the freezer for easy suppers but you can use canned. Dab on some salsa and put it into a 400 degree oven until melty and delicious.

Enjoy with sour cream, salsa and guacamole!
