I’ve tried a lot of granola bars in the past from baked to no bake varieties and while good most of them crumble apart as you eat them. Here’s a recipe that you can eat from start to finish without a big mess.
Combine oats, spelt flakes, both flours, coconut, ground almonds and carob chips in a big bowl.
Next melt nut butter, honey, Sucanat, vanilla and coconut oil over medium heat. Once melted together pour over dry ingredients and stir.
Add both eggs and pour into a lined 9 by 9 pan. Bake at 350 for about 20 minutes. Watch closely so it doesn’t burn. Cool in the pan for 30 minutes then in the fridge for 2 or so hours before cutting.
1 cup rolled oats
1 cup spelt flakes
1/2 cup oat flour ( you can make this by grinding oats in a blender)
1/2 cup spelt flour
1/2 cup coconut
1/2 cup carob chips/ chocolate chips
1/2 ground almonds/ almond meal
1 cup nut only nut butter
1/2 cup raw honey
1/2 cup Sucanat/ sugar cane/ dark brown sugar
1 Tbsp vanilla
1/4 coconut oil
