I’ve been helping little ones recover from illness all week while not feeling so great myself. Hubby is not back home until late tonight so I decided that a little treat was in order. Here’s what I made.
Start by warming milk, pumpkin, butter and honey on the stove until butter is just melted and the temperature of the mixture is warm but not hot.
In a bowl mix together 1 1/2 cups of your flour with the yeast and vital yeast gluten. Add the liquids and the egg until incorporated. Cover the bowl and set in warm place for ten minutes while the yeast gets going.
Add in the salt and the rest of the flour a bit at a time until the dough starts to come together and is not too sticky. Turn your dough out onto a floured surface and kneed while adding enough flour to form a smooth elastic ball of dough. Set the dough aside in a greased bowl until it doubles in size which will take about an hour.
When doubled press the dough down lightly and begin to form balls a bit smaller than a golf ball. Roll the balls in the sugar, flour and cinnamon mix and layer them into a greased oven safe bowl.
I made really large golfballs because I was tired and inpatient. It will look much nicer with smaller pieces. Bake in a 350 oven for about 30- 40 minutes. Here’s what it looks like baked.
Lastly turn out the bread right away so it doesn’t get soggy. This bread is really nice and not very sweet so you could skip the cinnamon, sugar ball in bowl thing and just form loaves for a really nice sandwich.
To finish I mixed up a bit of butter, icing sugar and milk and poured a bit over the top. It was awesome.

2/3 cup milk
2 Tbsp butter
2 Tbsp honey
1/2 cup pure pumpkin
2 3/4 – 3 1/4 cup unbleached flour
2 1/4 tsp yeast
1 Tbsp vital yeast gluten
1/4 tsp salt
1/4 cup coconut sugar
1 Tbsp flour
1 tsp cinnamon
