Meatless Monday- Greek yogurt pancakes

Just me and the gals tonight as hubby is away for work. Perfect night for pancakes. Plus I’m not feeling great so it’s nice to have something easy to prepare.

Greek Yogurt Pancakes

1 cup unbleached flour
1 cup whole wheat flour
1 cup spelt flakes
1/4 cup coconut flour (for added fiber)
2 Tbsp baking powder
1/4 tsp salt
2 cups milk
1/4 cup coconut oil
1/2 cup Greek yogurt (for added protein)
2 eggs

Mix the ingredients in the order listed. Cook your cakes. That’s all.
