My sister follows a gluten free low carb diet. In the interest of supporting her I have been helping her with different recipes for snacks and other low carb goodies. Last night we had planned a pizza and movie night after my gals went to bed. We were still a bit bummed over our last cook day which had a few complete failures. Now we were about to try pizza. We were nervous. We were really hoping for the best but were a bit apprehensive when we took the first bite. However to our pleasant surprise our pizza was good, not only good but this pizza was seriously delicious.
In prep for our cook day I researched a few different recipes before finally deciding on one of my own design which combined some ideas from a few different recipes. Here’s how we did it.
We combined the ingredients. Recipe below.
Spread the mix out flat onto a parchment lined cookie sheet using a spatula.
Baked that baby at 400 on top rack for tenish minutes til starting to brown.
Sorry about the pic not being close up. We had made a separate regular dough crust in case I didn’t want to eat the low carb one.
Next we added our toppings. You could add whatever you like. We added mozzarella, shrimp, feta, and pesto. Lastly we put our pizza back in to melt the cheese. Here’s what it looked like when done.
It was good. The best part was that you could actually pick up the pizza just like a regular pizza. We thought we might have to eat it with a knife and fork which is kinda lame.
Low Carb GF Pizza Crust
1 cup grated mozzarella cheese
1 Tbsp coconut flour
1 Tbsp almond meal
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
