So I had two lonely bananas that amazingly didn’t get eaten, a very rare occurrence in our house. Surely two bananas weren’t enough to make banana bread or were they? Off to Pinterest to find out…..and an hour later I had my starting off recipe.
Here’s the one I chose: Banana Chocolate Chip Oatmeal Bread
After gathering up our ingredients me and toddler set off to get baking. She loves helping mommy.
We made a few changes to the original recipe to reflect our personal food choices and to make up for the fact that we only had two bananas.
First spray two loaf pans with cooking spray- we used extra virgin olive oil spray. I did however find a pin about making your own spray oil so when we finish this can I think I will give it a shot. Next preheat oven and get to mixing.
Mix all dry ingredients. Then the wet. Then mix them together. Pour into pans. Bake at 350 until lightly brown and tooth pick comes out clean about 30 mins.
Here’s our revised recipe.
2 cups Whole Wheat Flour
1 cup Oatmeal
1/2 cup Organic Sugar
1/2 cup Sucanat
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1/2 teaspoon Sea Salt
1/2 cup Chocolate Chips (we used fair trade)
1/2 cup Coconut (just cause we like it)
1/2 cup Apple Sauce
1/4 cup Coconut oil
Here’s the final product. Little one couldn’t keep her hands off long enough for me to take a picture. What did she have to say on the final product “good mama” Enjoy!
